Ballerina Bites: Raw Choc - Chip & Cranberry Granola

Nothing says happy weekend like a delicious bowl of chocolate-berry goodness first thing in the morning! And nobody does breakfasts better than the gorgeous Ballerina Bites (aka. Alexandra McMaster), full-time dancer, kitchen whizz and queen of the healthy treats! This month Alex brings us a creamy, caramel-y mouth-watering granola recipe to fuel your day. Check out her recipe below:

 

 

When you’re craving a bowl of oaty flavoursome goodness, then you must have my Raw Choc- Chip & Cranberry Granola on hand….

This is not your typical crunchy style granola, but the flavours are heavenly, which totally makes up for that missing crunch factor. The recipe has a balance of wholesome ingredients like… oats, cranberries, pumpkin seeds and a naughty handful of dark chocolate chips to create a very addictive breakfast or treat.

Ingredients

 2 ½ cups rolled oats

½ cup dried cranberries

⅓ cup mini dark chocolate chips or cacao nibs

⅓ cup pumpkin seeds

½ tsp cinnamon

Pinch of salt

½ cup natural unsalted almond or peanut butter

½ cup maple syrup

 Method

 1. Add all dry ingredients in a large bowl and stir until combined.

2. In a small saucepan add peanut butter, maple syrup and slowly heat until the mixture resembles thick caramel.

3. Pour peanut butter caramel over oats and thoroughly mix using your hands. Mix until oaty nutty clusters form.

4. Serve granola with your favourite milk, yoghurt or ice cream.

Store granola in an airtight container in the fridge. Serves 8-12.
