Ballerina Bites: Cinnamon & Raisin Nut Butter

I’m sure you love nut butter just as much as I do. Have you ever thought of making your own? It’s a lot easier than you might think and cheaper than your store bought varieties too.
Here I have a nut butter variation, spiked with cinnamon, raisins and a little coconut sugar for good measure. It is slightly more gourmet than your usual almond or peanut butter, but what the heck! There’s no shame in diving in the deep end first!
Ingredients
125g raw almonds
125g raw walnuts
3 tbsp coconut sugar
½ tbsp ground cinnamon
Pinch of salt
3 tbsp raisins or sultanas
Method
Pre-heat oven to 170°C fan and line a tray with baking paper.
Evenly scatter almonds and walnuts over tray.
Roast nuts for 8mins or until golden (be careful not to burn them).
Add nuts to a food processor and blend.
Stop and scrap down the sides with a spatula throughout the process.
Blend nuts until a runny paste, this can take up to 15mins, just be patient.
Meanwhile add coconut sugar to a Nutri Bullet or coffee grinder and blitz until dust.
Once your nuts have reached a buttery consistency add coconut sugar and cinnamon.
Blend until combined and smooth.
Stir in raisins and pour nut butter into a clean jar or container.
Allow to cool (it will be slightly warm from the processing) before covering with an airtight lid.
Yields 1 large jar
