Almond & Oat Bars
We are all back into our busy schedules of work or school, and in desperate need of some yummy goodies to pack in our lunch bags. My Almond & Oat Bars are a simple one-bowl heavenly wonder and can be whipped up and baked in under 30 minutes!
These bars are nutritious, and a very satisfying snack that you can enjoy anytime throughout your day.
Ingredients
1 ¼ cups almond meal
1 cup rolled oats
¾ cup unsweetened shredded coconut
½ cup coconut sugar
½ -1 tsp ground cinnamon
½ tsp baking powder
pinch of salt
⅓ cup coconut oil, melted
2 tbsp pure maple syrup
1-2 tbsp water to bind
Method
Preheat oven to 170°C.
Line a square brownie tin with baking paper.
In a large bowl thoroughly mix all dry ingredients together.
Pour in the melted coconut oil, maple syrup, water and mix thoroughly to combine.
Firmly press mixture into prepared tin, using the back of a spoon.
Bake for 15- 20mins or until golden brown.
Allow to completely cool before slicing into bars.
Makes 9 - 12 bars.
Store in an airtight container for 1 week.
