Ballerina Bites: Banana Pancakes with Peanut Butter Chocolate Sauce

The very lovely Alexandra McMaster (foodie, dancer and Energetiks writer), otherwise known as Ballerina Bites has whipped up another divine creation for you to sink your teeth into this month! For anyone with a sweet tooth, look no further, Alex has created the most delectable pancake recipe ever! Check out the recipe below:

This month I have created the most mouth watering, lick the plate clean recipe for you all; Banana Pancakes with Peanut Butter Chocolate Sauce! Yes, this recipe sounds and tastes absolutely decadent, but like all my recipes is well balanced.

Banana Pancakes with Peanut Butter Chocolate Sauce

Ingredients

½ banana
½ cup plant based milk
1 tsp lemon juice
½ cup rolled oats
2 tbsp brown rice or buckwheat flour
1 tbsp coconut sugar/ liquid sweetener or 1 medjool date
¼ tsp baking powder
¼ tsp baking soda
⅛ tsp vanilla powder or extract
⅛ tsp cinnamon
Pinch of salt

Coconut oil for frying

Chocolate Sauce

1 tbsp peanut butter
1 tbsp cacao powder
1 tbsp agave or maple syrup
Pinch of salt (if peanut butter is not already salted)
Water to thin

Toppings

½ banana, sliced
Small handful unsalted peanuts, roughly chopped

Method

Place the banana, milk, and lemon juice in a blender and blend until smooth. Add oats, brown rice flour, coconut sugar, baking powder, baking soda, vanilla, cinnamon, salt and blend until smooth.

Heat a fry pan over medium heat with a teaspoon of coconut oil.

Spoon 2 tbsp of pancake batter into the pan, cook on one side until bubbles appear then flip and continue to cook for 1 minute.  Repeat the process until all the batter is used.

Meanwhile in a small bowl add peanut butter, cacao powder, agave, salt (optional), water and stir. Depending on the thickness of your peanut butter, add only small amounts of water at a time until fudgy, smooth and a pourable consistency is achieved.

Stack pancakes on a plate and pour over the chocolate sauce, top with remaining banana and crushed peanuts for a delicious crunch.
