Tuna Feta Pasta

Have you seen the viral TikTok baked feta pasta video? After I heard rave reviews I needed to see what all the fuss was about and like everyone, I wasn’t disappointed.

However, while cooking the recipe I felt it was lacking in protein and decided to stir through some tuna. Little did I know that this would create the most incredible tasting dish and very similar to my favourite, Tuna Mornay.

If you’re familiar with the process of making Tuna Mornay, then you’ll know the base of the recipe is a white sauce. The tricky thing about a white sauce is the continuous stirring, and the amount of dishes you have to clean at the end of cooking.

What I love about the baked feta version is the sheer simplicity of the recipe and the fact that it doesn’t require your close attention.

Ingredients

100g feta

24x cherry or roma tomatoes

140g pasta of choice

2 tbsp olive oil

2x 145g canned tuna in spring water, drained

A generous handful of fresh dill

Salt and pepper to taste

Chilli flakes (optional)

Method

Set oven temp to 180°C and line a tray with baking paper.

Place the feta onto the tray and scatter over cherry tomatoes - bake in the oven for 30 minutes.

In the last minutes of cooking (depending on how long your pasta needs to cook according to the packet instructions) add the pasta to a medium sized saucepan with boiling water - don’t forget to season the water with sea salt.

Once al dente, loosely strain - we want a tablespoon or so of the cooking liquid to help emulsify the sauce.

Add the olive oil, cans of tuna, dill and the baked feta and tomatoes into the saucepan.

Stir until the feta creates a creamy coating on the pasta and tuna.

Season generously with salt and pepper before serving in bowls, also adding a sprinkle of chilli flakes if you wish.

Serves 2
