Dancer Treats | Black Bean Brownies

We all love a little sweet treat every now and then. The taste of those sugar molecules dancing on our tongue as we take our first bite. But what if we could make those sweet treats a little more nutritious and essentially have our cake and eat it too?! These Black Bean Brownies satisfy those sugar cravings, but with the inclusion of black beans which also increase the protein and fibre content of our sweet treat. A perfect post-dance snack, afternoon pick me-up or evening dessert, these gluten free, dairy free (and if need be nut free) brownies are sure to make you feel like your not-so naughty treat is naughtier than it is!


Ingredients

  • 1 tin of black beans (rinsed and drained)

  • 3 tbsp cacao powder

  • 3 tbsp coconut oil (melted)

  • 3 eggs

  • 1 tsp concentrated vanilla bean paste

  • 3/4 cup maple syrup

  • Pinch of salt

  • 1/3 cup of walnuts (or any nut, berry or choc chip you prefer)

Method

  1. Preheat the oven to 180ºC and line a square baking tin (roughly 18x18cm) with baking paper.

  2. In a food processor combine all ingredients (except the walnuts/berries/choc chips) and blend until a batter like consistency is achieved. If you don’t have a food processor, blend the beans in a blender/nutri-bullet and then mix in a bowl with the other ingredients.

  3. Once mixed, stir through the walnuts/berries/choc chips. Pour into the lined baking tin and scatter a few more walnuts/berries/choc chips on the top.

  4. Bake for 20-30 minutes or until firm in the middle.

  5. Allow to cool, cut, serve, and enjoy!
